4 10 oz. packages frozen spinach
3 tbsp. unslted butter
1 white onion (minced)
3 cloves garlic (minced)
¼ cup all purpose flour
3 cups heavy cream
4 oz. cream cheese
1 cup mozzarella cheese
½ tsp. nutmeg
½ cup parmesan cheese
4 tsp. kosher salt
1 tsp. ground pepper

Directions:

Put spinach in a colander
Pour over just-boiled water to wilt
Refresh under cold water
Wring out
Pat dry on kitchen paper

Heat butter in a frying pan set over medium heat
Sauté the onion and garlic until soft
Stir in the flour and cook
Pour in the heavy cream
Add in the cream cheese and mozzarella
Stir until the sauce is thick

Preheat the oven to 350º
Stir the spinach, nutmeg and half the parmesan into the sauce
Season with salt and pepper to taste
Transfer to a small ovenproof dish
Sprinkle with the remaining parmesan
Bake for 30 minutes
