1 can Sweet kernel corn
1 can Pinto Beans
1 can Black eye peas
1 jar Pimento
1 can Garbanzo Beans
1 Red Pepper
1 Green Pepper
1 Jalapeno Pepper
1 Sweet Onion (medium size)
2 sprigs Cilantro
1 c Sugar
3/4 c Cider Vinegar
1/2 tsp Salt
1/2 c Olive Oil
Pepper to Taste

Rinse and Drain Corn, Pinto beans, Garbanzo beans, Black-eye peas, and Pimento. Place in a medium bowl.

Finely chop Peppers. ( if you want mild take off the seed and membrane),onion, and leaves of the Cilantro. Add to Medium bowl with beans and mix to blend.

In another small bowl add sugar, cider vinegar, salt, and pepper. Mix.

Using Whisk add Olive Oil to the mixture, whisking as pour to blend.

Add mixture in small bowl to the bean-pepper mixture and stir to blend.

Cover bowl and refrigerator overnight, stirring mixture occasionally.

Serve with Fritos, Tostitos or similar chips.
