2 tspn coriander seeds
2 tspn cumin seeds
2 tspn black mustard seeds
½ tspn fenugreek or fennel seeds
4 cardamom pods bashed open
8 curry leaves
1½ tspn chill powder
1 tspn turmeric
¼ tspn ground cloves
1½ tspn ground cinnamon

Directions:
Directions:
Toast the seeds, cardamom pods and curry leaves in a dry pan for a minute, until fragrant and lightly toasted, then tip them into a pestle and mortar or spice grinder but discard the cardamom husks and remove the curry leaves before grinding. Add the chilli powder, turmeric, cloves, cinnamon and curry leaves.

The curry powder will keep for a few weeks if stored in an airtight jar/container.
