4 boneless skinless chicken thighs or 2 boneless chicken breasts or rotisserie
1/4 teaspoon salt
1 tsp. Olive oil
1/2 diced onion
1/2 diced celery
1/2 cup carrot (or more)
Handful of shred cabbage (optional)
3 cloves garlic minced
6 cups chicken broth or a bit more
2 bay leaves
Black pepper to taste
Cooked egg noodles 1 cup. Or rice. Do not mix into the soup.
The noodles or. Rice absorb broth.

Directions:
Directions:
Season chicken with salt. Sauté chicken in oil, add onion, carrot, celery and handful of shredded cabbage until chicken is done and vegetables are soft. Add garlic. Add broth, 1/4 cup water, bay leaves and 1/8 tsp. Black pepper.
Bring to boil, cover and reduce to simmer. Cook 30 minutes or longer.
Serve over cooked noodles or cooked rice.

Either dice chicken or cook whole and shred after cooked. Or better yet a rotisserie chicken!
