Rack of baby back ribs (two will fit on each sheet pan in the oven at a time, plan on oven space and number of people you are serving as to number of ribs)

Salt

Pepper

Your favorite BBQ Sauce (I like Sweet Baby Rays) You will need enough for basting throughout the cooking process


Equipment:
- Sheet pans
- Cooling rack that fits on your sheet pans
- Foil

Preheat oven to 325 degrees F

Line sheet pans with foil - get it tight - clean up will be a breeze if you do. Place cooling racks on the sheet pans after lined with foil. This helps the airflow as the ribs cook.

Clean the Ribs - flip the rib to the underside - remove the silver skin. Run a butter knife between the rib and silver skin to get it started, then use a paper towel to grab it and pull it off. (You can skip this, but the silver skin is a tough membrane that won't break down during the cooking).

Salt and Pepper both sides of ribs

Place two racks of ribs on each cooling rack on the sheet pan

Tightly wrap the ribs in foil

Bake for 3 hours - brushing with sauce every hour.

You can place under the broiler uncovered for 5 - 7 min at the end to caramelize the sauce.
