2 cups all purpose flour
2 cups sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3 cups finely shredded carrots
1/2 cup cooking oil
1/2 cup unsweetened applesauce
4 eggs

Icing:
8 oz. cream cheese
2 TBL butter
1 lb. powdered sugar
1 TBL vanilla
Milk

Cake:
Preheat oven to 325 degrees

Grease and flour two 8" round layer cake pans

Combine flour, baking powder, baking soda, salt and cinnamon in a bowl and set aside.

In mixer bowl, combine cooking oil, applesauce, sugar and mix well.

Add eggs one at a time mixing after each. Add carrots, then dry ingredients a little at a time and mix well.

Pour batter into prepared pans.

Bake about 30 minutes or until cake tests done.


Icing:

Combine all ingredients in mixing bowl. Beat together, thin with milk as needed.

Ice carrot cake layers. Refrigerate left overs.
