3 Shallots, peeled and halved
4 cloves garlic, peeled
1/2 cup balsamic vinegar
3 cups extra virgin olive oil
Salt and Pepper to taste

Directions:
Directions:
In a food processor, place the shallots, garlic, salt and pepper, and balsamic vinegar.

Process until all ingredients are well blended and pulverized.

With machine running, add the olive oil in a steady stream until all is used and vinaigrette is stable.

Pour into a container

Leftover can be stored in the refrigerator.

You will need to let it warm to room temp before using and whisk slightly to reconstruct.
