1½ c. Sugar.
⅓ c. Cornstarch
⅛ teas. Salt
4 Egg Yolks
1¾ c. Water
½ c. Lemon Juice
3 tbsp. Butter
1 teas. Grated lemon ring
1 baked 9-inch pastry shell

Meringue:
4 Egg Whites
½ teas. Cream of Tartar
¼ c. PLUS 2 tbsp. Sugar
½ teas. Vanilla

Directions:
Directions:
Combine first 3 ingredients.
Combine egg yolks, water and lemon juice; stir into sugar mixture.
Cook, stirring constantly until mixture thickens and boils.
Boil 1 minute, stirring constantly.
Stir in butter and grated lemon rind.
Spoon hot filling into pastry shell.
Spread Meringue over hot filling, sealing to edge of pastry.
Bake at 325º for 25 minutes.

For Meringue, beat egg whites and cream of tartar until foamy.
Gradually add sugar, 1 tbsp. at a time, beating until stiff peaks form and sugar
dissolves. (2-4 minutes).
