6 kale leaves and tender stems, thinly sliced (about 3 cups)
2 T olive oil
1 T red wine vinegar
1 t Dijon mustard
salt and pepper
4 radishes, quartered
1/2 zucchini, thinly sliced (about 1/2 cup)
1/2 c grape tomatoes

Directions:

1. In a large bowl, vigorously massage the kale leaves with both hands until the kale darkens and breaks down, about 3 minutes. Set aside.

2. In another bowl, whisk together the olive oil, vinegar, mustard. Season with a pinch of salt and a twist of black pepper, Add kale, radishes, zucchini and tomatoes. Season with more salt and pepper and toss together.
