2 T olive oil
1 c spinach leaves
salt and pepper
3 large eggs
1/2 t oregano oil

Directions:

1. Set a medium non stick skillet over medium heat.
Add olive oil and heat to simmering, then heat the spinach. Season with a pinch of salt and twist of black pepper. Cook, stirring occasionally; until the spinach begins to wilt, about 30 seconds.

2. Add the eggs and cook, occasionally using a spatula to gently push the cooked eggs in from the outer edge. Tilt the pan so that the liquid eggs fill the now vacant spaces. When the eggs are almost set throughout, season them with another pinch of salt and twist of pepper and drizzle with oregano oil.

3. To serve, tilt the skillet and gently roll the omelet out onto a plate.
