2 TBS olive oil
1 lg onion, chopped
2 carrots, chopped
2 stalks celery, chopped
1/2 tsp chili powder
1/8 tsp pepper
1 can white beans (drained)
1 can red kidney beans (drained)
2 cloves garlic
1 tsp thyme
1 potato, cubed
4 cups chicken broth
1 cup water
1/2 head chopped cabbage
2 cups chopped tomatoes

Directions:
Directions:
In dutch oven, heat olive oil on med heat.
Add onions, carrots & celery.
Season with chili powder.
Cook 5-6 minutes until veg are soft.
Add garlic, cook 1 minute.
Stir in thyme, beans & potato.
Add broth & water.
Bring to simmer.
Stir in tomatoes, pepper & cabbage.
Cook for 30min to an hour.
