8 potatoes (about 4 lbs.), peeled and quartered
1 1/2 tsp. salt, divided
3/4 cup whipping cream
1/4 cup butter, cubed
1/2 tsp minced fresh rosemary
1/4 tsp. pepper

Directions:
Directions:
Place potatoes in a Dutch oven; add 1 tsp. salt. Cover with water. Bring to a boil. Reduce heat; cover and simmer 15-20 minutes or until tender. Drain.

Place potatoes in a large bowl. Add the cream, butter, rosemary, pepper and remaining salt; beat until smooth.

Potatoes go well with roast beef.

Note: If you are not fond of rosemary, boil rosemary with potatoes and then remove, it gives a nice flavor.
