For every cup of leftover mashed potatoes, add 2 heaping tbsp. of flour, 1 green onion finely chopped, salt and pepper to taste. Mix together, you may have to add a little more flour, depending how soft your mashed potatoes are. You need to be able to form patties. Using a non stick pan add a pat of butter or margarine. When pan is heated fry your patties until browned and crisp, about 3 or 4 minutes. Carefully turn the patties over and cook other side until brown.
