1/2 C. sour cream
4 t. dry mustard powder (or 1 T. prepared mustard)
4 C. frozen O'Brien potatoes (half of a 28 oz. bag), thawed
10 oz. sliced corned beef, cut into 1/4 X 1 1/2 inch strips
1 lb. (2 C.) sauerkraut, drained
1 1/2 C. shredded Swiss cheese (about 6 oz.)

Heat oven to 375º. Spray a 9 inch square baking dish, or 2 quart casserole pan, with nonstick spray. In a large mixing bowl, blend sour cream with mustard. Add potatoes, stirring to combine. Transfer potato mixture to prepared baking dish. Top with corned beef , then with sauerkraut. Cover dish with foil or lid and bake 30 minutes. Remove foil and sprinkle evenly with the shredded cheese. Bake uncovered 25 minutes longer, or until cheese melts and edges of casserole are bubbly.

Can substitute 8- 10 oz. smoked kielbasa sausage, cut into 1/2 inch chunks, for the corned beef.
