1 cup orzo
2 pinches saffron thread
1 cup chicken broth
3 tablespoons olive oil
1/3 lb. chorizo, chopped
1 onion
1 small red bell pepper, chopped
2 cloves garlic
1 teaspoon ground turmeric
1/3 cup peas
1 lb. shrimp, peeled and deveined
1/4 cup chopped parsley
1 teaspoon sweet paprika
Juice of 1/2 lemon

Cook orzo al dente. Drain and cover. In a small saucepan, steep saffron in the chicken broth over low heat. In a medium skillet, heat 1 tablespoon olive oil. Add the chorizo and cook until browned, 2 minutes. Add the onion, bell pepper, garlic and turmeric. Cook for 5 minutes. Add shrimp and cook until pink. Add peas, parsley, paprika and lemon juice. Remove from heat and pour the saffron broth over the shrimp mixture. Serve over orzo. Enjoy!
