"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 Pkg pie crust refrigerated - I used Pillsbury brand
1 10 1/2 oz Cream of Chicken soup
1/2 cup milk
1 package 10 to 12 oz frozen mixed vegetables, thawed (about 2 2/3 cups)
1 cup shredded Cheddar cheese (about 4 oz)
1/2 cup chicken broth (I added this to an online recipe)
2 potatoes cooked and diced

Directions:
Directions:
Step 1 - heat oven to 400 degrees F. Line the bottom of a 9-inch pie plate with one pie crust. I did not trim off the excess as I used it to seal the top crust layer.

Step 2 - Mix all of the ingredients listed above except for the cheese together and pour into the pie plate.

Step 3 - Sprinkle 3/4 of the cheese over the top of the mixture.

Step 4 - Place the second pie crust on top of the mixture and plate. Fold and pinch the two pie crust edges together then put slits in the top crust with a knife.

Step 5 - Bake for 35 to 40 minutes or the crust is golden brown. Remove from the oven and spread the remaining cheese on the top to melt.

Let sit for about 5-7 minutes then cut into pieces and enjoy.
