2 tbs butter
1 lg onion
6 to 8 potatoes, peeled and finely diced
1 lg carrot
4 cups chicken broth
Salt and pepper to taste
1 cup Half and Half
1 can corn drained
1 cup grated cheddar cheese
Optional - Crumbled bacon

Directions:
Directions:
Melt butter in large sauce pan and add onions, potatoes and carrots. Cook, covered over very low heat until soft, about 7 minutes. Add broth and salt and pepper to taste; simmer until vegetables are tender. Remove from heat. Pour half the soup into food processor or blender and purée until smooth. Return to remaining soup in sauce pan and add half-and-half. Stir in corn and cheese. Reheat until cheese is melted; do not allow to boil.
Serve with crumbled bacon on top if you want.

My family hates when I add the corn in this soup but I like it that way. You can totally leave it out and it is more like a traditional potato soup.
