2 boxes Betty Crocker Super Moist yellow cake mix
2 boxes vanilla instant pudding & pie filling mix
2 cups milk (I use 2% but whatever you have on hand will work)
1 cup vegetable oil
1/4 cup whiskey (users choice)
8 eggs
2 cups chopped walnuts

Heat oven to 350 degrees. Spray 9 (5x3 inch) loaf pans with cooking spray.

In a large bowl beat cake mix, pudding mix, milk, oil, 1/4 cup whiskey, and the eggs with an electric mixer on medium speed for about 5 minutes. Add 2 cups of walnuts and beat for another minute (batter will be very thick). Divide the batter evenly among the pans. Bake for 35-40 minutes or until you insert a toothpick and it comes out clean. Remove from oven and place on cooling racks.

While the cakes are still warm, take a bamboo skewer and poke multiple holes in the cakes. Take a spoon and start pouring some of the remaining icings over the cakes and let soak in for around a minute each. Repeat until all icing has soaked into the cakes. Take the reserved 1 1/2 cups of icing and add the remaining 2 cups of walnuts. Spoon walnut mixture over the tops of the cakes. Let cool completely, which should take about an hour.

1 1/2 cups whiskey (same as above)
4 cups powdered sugar
2 cups chopped walnuts

In another large bowl beat the melted butter, 1 1/2 cups of whiskey, and the powdered sugar with a whisk until smooth. Reserve 1 1/2 cups on the icing in a small bowl and set aside.

You can use bigger pans if you want to make larger sized cakes and would just need to adjust times of cooking the cakes. These also are great for gifts and can be frozen by wrapping securely in plastic wrap.
