¾ c.Sugar, divided
¼ c. Cornstarch
2 c. Half-and-Half
4 Egg Yolks
3 tbsp. Butter
1 c. Flaked Coconut
2 teas. Vanilla, divided
1 Baked Pie Crust Shell
1 c. Whipping Cream

Directions:
Directions:
Combine ½ c.sugar and cornstarch and gradually add half and half and egg yolks.
Bring to a boil whisking constantly; boil 1 minute. Remove from heat.
Stir in butter, coconut and 1 teas. Vanilla. Cover tightly with Saran Wrap and cool.
Spoon custard mixture into pastry shell and chill until set.
Beat whipping cream at high speed, gradually add remaining ¼ c. sugar and remaining 1 teas. vanilla, beating until soft peaks form.
Spread or pipe whipped cream over pie.
Store in refrigerator.
