2 ½ cups flour
½ cup sugar
1 cup cold butter, cubed
1 jar marachino cherries, reserve the juice
12 oz mini chocolate chips
1 tsp almond extract
2 Tbsp shortening
*Decorator red sugar or more regular sugar

Directions:
Directions:
In large bowl combine flour and sugarb cut in butter until crumbly. Gently mix in cherries, ⅔ cup chocolate, extract, and reserved cherry juice (1 tsp at a time) until dough forms a ball.

Shape into ¾ in balls (I use small cookie scoop) and place on baking sheets. Flatten with small juice glass dipped in decorator sugar.

Bake at 325º for 10-12 minutes. Remove to racks and cool completely

In microwave melt shortening and remaining chocolate; stir until smooth. (This makes a lot of chocolate so if you have other cookies you want to decorate with chocolate plan accordingly). Decorate cookies and let stand until firm.

This is another cookie I make at Christmas every year. I used to make a chocolate covered cherry cookie but these are much easier and have a similar taste.
