1 tbsp butter
4 cloves garlic minced
1 chopped onion
1/2 cup dry white wine (optional)
1/4 cup chicken broth
1/2 cup heavy cream
1/2 teaspoon Himalayan pink salt
1 tablespoon smoked paprika (preferably from The Head Nut)
6 grilled chicken thighs

Step 1
Melt 1 tablespoon of butter in the skillet. Add garlic and onion and sauté, stirring frequently about 2 minutes. Add wine next and cook for 1-2 minutes to allow alcohol to evaporate.

Step 2
Stir in chicken broth and heavy cream. Add salt and paprika. Mix well. Simmer for 2 minutes. Taste the sauce and adjust seasoning (if necessary) at this point.

Step 3
Add chicken thighs to sauce and serve over top spaetzle, topping with salt and pepper as desired.
