2 Pillsbury already pie crusts
1 can mixed vegetables
2 lbs boneless/skinless chicken
1 can cream of chicken soup

Directions:
Preheat oven to 425º. Cook chicken with 1 cup of water in slow cooker for 6-8 hours. Shred or chop drained chicken into bite sized pieces in a large bowl. Drain mixed vegetables and mix with chicken and 3/4 can of soup. Put first pie crust in pie pan. Put chicken & vegetable mix into pie crust. Top with the other, crimp the crust and cut vent in top. Bake 30-40 minutes. Cover edges of pot pie for all but 15-20 minutes.

I slow-cooked 3 lbs of boneless thighs with 1 cup of water and a can of cream of chicken soup. After removing the chicken for the pot pie (and a small bowl for Sunny)put the rest of the 2nd can of soup in with the rest of the chicken and soup and I’ll eat it for lunch the next day.
