2 Tbsp olive oil
1 1/2 cups onion
2 cups carrots, chopped
3 celery stalks, diced (about 1 cup)
4 garlic cloves, minced (about 1 Tbsp)
1/2-1 tsp crushed red pepper
8 oz dried lentils, rinsed
1 28 oz can crushed tomatoes
3 cups vegetable stock
1 bay leaf
1 Tbsp dried basil
1/2 Tbsp dried parsley
1 tsp salt

Directions:
Directions:
Add all ingredients to slow cooker, mix together until combined. Cook on low for 4-5 hours, or until lentils have softened and sauce is thick. Add water to thin out sauce if necessary and add seasonings to taste.
