3 medium bananas mashed
1/2 c. mayonaise or dressing
1 egg
1 1/2 c. flour
1tsp. baking soda
1/2 tsp. salt
3/4 c. sugar
1/2 c. walnuts or pecans (optional)

Directions:

1. Preheat oven to 350º
2. In a bowl mix together mashed bananas, mayo, and egg. In a separate bowl
combine flour, sugar, baking soda, salt and nuts (if using)
3. Add flour mixture to wet mixture and stir just until combined. Note: The mixture will
be very thick, do not over mix.
4. Pour into a greased loaf pan. Bake 60-70 minutes or until a toothpick comes out
clean.
5. Remove from pan and allow to cool completely.

So this is quite a tale. I actually got this recipe from Pinterest it was created by a woman named Holly that has a site called Spend With Pennies. Anyhow I loved how simple and easy this recipe looked. Well I have two loudly proclaimed haters of mayonaise, but I thought.... "what they don't know won't hurt them".

Boy did my instincts on this one pay off! Not only did I think it was the best banana bread I ever had (sorry Nana.... RIP), but the two mayo haters were the loudest at proclaiming that this was by far the best banana bread that they ever had! AND when could I make more. I made this so many times the end of 2020 I started to not even have to look at the recipe and started making double batches because there was none to share since they were eating it so fast. Just a side note, my guys prefer it pure w/o any nuts, go figure.

In addition, I am happy to say that the lucky people that got loaves that I was able to stash away also proclaimed it to be the clear winner as the best ever and requested the recipe. I guess since I am including it in our family book, the secret is out of the bag. Hey haters... "Don't hate"! Love can come from unexpected sources ;)
