3/4 lb. unsalted butter softened
2 c. sugar
6 eggs at room temp
11/2 tsp. vanilla
11/2 tsp. almond extract
3 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
14 oz sreddend coconut
1 c. buttermilk
1 can cream cheese frosting

Directions:
Directions:
Preheat oven to 350. Using a mixer cream butter and sugar at low speed. Add eggs one at a time scraping down sides often. Add vanilla and almond and blend well. In a seperate bowl sift together flour, baking powder, baking soda and salt. In 3 parts add buttermilk and dry ingredients to batter and begin and end with dry ingredients. Mix until just combined. Fold in 1/2 of the coconut. Spread batter into a 13 x 9 pan which has been sprayed. Bake 35 to 45 minutes and cool on a rack. Frost with cream cheese frosting and sprinkle with coconut.
