1 cup quick cooking grits
4 cups chicken broth
1/2 tsp salt
2 T butter
4 green onions, chopped
1 green bell pepper, chopped
1 tsp minced garlic
1 pound peeled shrimp
1 cup monterey jack cheese
3/4 cup cheddar cheese
10 oz can Rotel diced tomatoes and green chilies
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/4 cup cheddar cheese

Preheat over to 350 degrees, spray a 9x13 casserole dish with Pam. Cook grits in broth with 1/2 tsp salt. Melt butter in a skillet, add onions, bell peppers, and garlic. Cook until pepper and onions are soft. Stir in shrimp, cook until almost firm. Stir the 1 3/4 cheeses into the cooked grits; when done, pour into baking dish. Add tomatoes, peppers, and cayenne to the shrimp mixture. Cook some of the liquid out. Spread over grits. Top with 1/4 cup cheese. Bake for 25 minutes.
