5-6 c. torn bread or rolls
1/2 c. dried cranberries, chopped
Juice & finely grated zest of 2 oranges
(1/2 c. juice and 2 tsp. zest)
2 tsp. vanilla
4 Tbsp. butter
3 c. half and half, heated but not boiling
4 large eggs, whisked
1 c. granulated sugar
pinch of salt

Butter a 9 inch square baking dish. Heat oven to 350º. In a large bowl, combine torn bread, cranberries, orange zest, and juice. In another bowl whisk together vanilla, butter, half and half, sugar and eggs. Pour over the bread. Let bread soak for about 5 minutes. Pour into a buttered baking dish; place this dish inside a larger pan and place on rack in oven. Pour very hot water into the larger outer pan to a depth of about 1/2 inch. Bake 45-55 minutes until set. Serve with vanilla sauce (pg.112) or a little heavy cream. A great breakfast or dessert.
