1 cup long grain rice and 2 cups water, cooked
1 green bell pepper, chopped
1/2 cup onion, chopped
1 teaspoon curry powder
1˝ teaspoon salt
1/4 teaspoon black pepper
1/2 cup peas - fresh or frozen
2 fresh green onions cut, for sprinkling over the top when serving

Makes it easy when rice cooked in a rice cooker.
While the rice is cooking - in a large skillet - sauté the chopped onions and green bell peppers in one tablespoon water until the onion is translucent. About 10 to 15 minutes.
Stir in the curry powder, salt and pepper.
Stir on low for 5 minutes.
Add the cooked rice and frozen peas to the skillet mixture and heat through.
Serve with the chopped green onions sprinkled over the top.

I usually triple this recipe. Love to have leftovers. Also great when adding precooked cut up rotisserie chicken.
