2 tablespoons oil
¼-½ cup minced onion
4 teaspoons garam masala or curry powder
1 large can tomatoes (whole, crushed, chopped)
1 tablespoon minced or grated fresh ginger
1 pound lean ground beef
1½ cup peas or other vegetables
¼ cup yogurt optional
fresh chopped mint or coriander optional

Directions:
Directions:
in a large frying pan heat the oil
Add onions and cook until soft.
Add spice and cook for 1-2 minutes.
Add tomatoes and break up pieces.
Add ginger.
Cook until the mixture thickens.
Add beef and break it up with a fork.
Cook until no pink remains.
Stir in peas or other veggies and cook 1-2 minutes.
Top with yogurt and herbs and serve with rice

Personal Notes:
Can cook beef before adding and drain off fat if the meat is not lean.
Can use beans, cauliflower, broccoli and peppers. If they are fresh will need to cook a little longer.
