For the Bechamel sauce:
6 Tbsp butter
6 Tbsp flour
2 1/2 cup milk
1 tsp salt
1/4 tsp nutmeg

For the sandwich:
16 slices country bread
4 Tbsp butter, softened
16 oz Bechamel sauce
8 slices of ham (or two slightly thicker ones from leftovers)
16 oz shredded Gruyere, divided

Directions:
Directions:
Preheat oven to 425. Line 2 baking sheets with parchment paper.
Prepare bechamel sauce: Melt butter in medium pot over medium high heat. Add flour. Cook 1 minute, whisking constantly. Whisk a small amount of milk into the roux. Continue to slowly add milk, stirring to fully incorporate before adding more.
Heat until bubbling. Turn off heat. Stir in salt and nutmeg. Set aside. Grate Gruyere on large holes if not grated. Set 8 slices of bread on baking sheet. Spread 2 Tbsp bechamel sauce on each piece. Add 1 slice of ham to each piece of bread.
Add 2 Tbsp Gruyere cheese on top of each piece of ham.
Set another piece of bread on each sandwich. Spread 2 Tbsp bechamel sauce on top of each piece.
Evenly sprinkle remaining cheese on top of the sandwiches.
Bake until cheese is browned and edges are crisp, about 15 minutes.
