3 eggs
1½ cups sugar
3 tsp vanilla
2¼ cups grated zucchini
¾ cup oil
3 cups flour
1 tsp salt
2 tsp baking powder
2 tsp cinnamon
½ cup raisins
½ cup chopped nuts

Directions:
Directions:
Preheat oven to 350º F.

Beat eggs until fluffy, add sugar and vanilla.

Squeeze out excess moisture in zucchini, add to egg mixture and add oil.

Combine dry ingredients, add to egg mixture all at once, and stir to blend.

Add raisins and nuts if desired.

Pour into 2 greased loaf pans, bake at 350º F for 40 minutes.
