Hall's Steakhouse Chop Salad Recipe

2 packages of Romaine Lettuce (6 stalks) cleaned and only using the white part of the lettuce. Thinly Chopped
3 bunches of watercress, remove stems
One cucumber, seeded and diced
4 celery sticks, diced
One Yellow and One red pepper small dice
1/2 cup of black eye peas (cooked) Can version is ok
1 & 1/2 carton of crumbled feta cheese
1 pound of bacon cooked and crumbled
1 cup of grape tomatoes, cut into halves
Prepare all ingredients (into ziploc bags) and refrigerate will making dressing

Green Peppercorn Dressing:
1/4 cup of finely diced shallots
2 tablespoons minced garlic
1/4 cup of champagne vinegar (don't sub this with another vinegar)
2 Tablespoons of worcestershire sauce
1 cup of mayonnaise
1/2 cup of buttermilk
2 Tablespoons Grained Creole Mustard
1/2 cup of green onions finely chopped
1/4 cup of fresh chives
1 tablespoon of sea salt
1/2 cup of canola oil
1/4 cup of green peppercorns, dried (can sub black peppercorns, if so use a little less of the black peppercorns)
Combine all together in food processor or blender.

Place all salad ingredients, except the bacon, in a large bowl.
Stir in dressing, in small amounts until the salad is lightly dressed, being
careful not to use too much of the salad dressing.

For the dressing mix and blend completely in a blender or food processer. This tends to overflow in the food processer---sloppy!
Toss this salad with about 3/4 cup of dressing. Don't over dress the salad.

For presentation. Place some bacon crumbles on the salad plate. Use a large circular ring (sold for cutting biscuits) and pack the dressed salad into the ring. Slowly remove the ring and place a small sprig of watercress on the top!
The biscuit ring is a great gadget for presentation. can be used for lots of plating...rice, macaroni & Cheese, whatever. Looks fancy and remember you eat with your eyes too! If you take the time to make a nice dinner, plate it!

This salad is a "must have" from Hall's Chophouse, and has become a must have for special occasions at our house. It's now a Christmas eve tradition, for the first course of our family Christmas eve menu. The dressing is really great and will keep for a few weeks in the refrigerator.
