½ C butter
⅔ C sugar
2 eggs
1 C buttermilk
½ tsp baking soda
1 C flour
1 C cornmeal
½ tsp salt

Preheat oven to 375⁰. Grease 8x8 pan.

Melt butter in large skillet. Remove from the heat and stir in sugar, mixing well. Quickly add eggs and whisk until well blended. Add baking soda to buttermilk and stir. Add buttermilk to skillet and blend well. Add flour, cornmeal and salt and whisk until smooth.

Pour into 8x8 pan and bake for 30-40 minutes, or until toothpick comes out clean.

Baking time is 30 minutes in a gas oven. This is even better than Jiffy brand cornbread! Sweet and very moist!
