Beef Stroganoff Recipe

1 Tbsp vegetable oil
2 lbs chuck roast, cut into ½" strips
Salt & pepper
1 Tbsp butter
3 Tbsp flour
½ medium onion, sliced or diced
2 cloves garlic, minced
8 oz mushrooms, sliced
½ C white wine
4 C beef broth, divided
2 C creme fraiche or sour cream
1 Tbsp fresh chopped chives
Salt & pepper to taste

Season beef generously with salt & pepper.

Heat oil in a large skillet until nearly smoking. Add beef and stir constantly for 6-7 minutes until liquid evaporates and the beef is browned. Remove beef from the skillet and set aside.

Melt butter and add mushrooms and onions, sautéing until browned. Add garlic and stir constantly for 30 seconds. Add flour, stirring occasionally for 1-2 minutes.

Stir in wine and 1 cup beef stock, scraping browned bits from bottom of skillet. Bring to a simmer and cook 3-4 minutes until sauce thickens.

Add beef strips and remaining stock, bring to a simmer, cover and turn heat to low. Cook for about an hour, stirring every 20 minutes, until beef is very tender and sauce has thickened.

Stir in creme fraiche or sour cream and chives. Season with salt and pepper to taste. Serve over buttered noodles.
