2 tins of Brunswick or other sardines packed in oil
1 small onion, grated
a small apple, grated
½ tsp. sugar or to taste
2 tbsp. white vinegar
salt and pepper to taste

Directions:
Open and drain sardine cans. Place sardines flat on a plate or cutting board. Slice each sardine lengthwise along the fillet line. Remove anything that looks like guts but don't discard the bones. They are so soft that they can be mashed in easily for a 30% calcium increase. Mash together the sardines, onion, apple, sugar, salt, pepper & vinegar to taste with a fork. Use challah or white sandwich bread and maybe lettuce to make sandwiches.

These sandwiches are really tasty and were a family favourite when my mother, Nettie used to make them for fishing trips etc. Max and I still enjoy them occasionally for lunch. I think they are pretty healthy and inexpensive too.
