2 large or 3 small squirrels will serve 4 people
spice rub
1/4 C olive oil
bottle of barbecue sauce
Spice rub:
2 t salt
2 t ground black pepper
2 t paprika
1 t garlic powder
1 t onion powder
1 t ground mustard
1/2 t cinnamon
1/2 t celery salt
1/4 t cayenne pepper

Directions:

Turn oven to 350º.
Begin with squirrel parts (see "Curried Squirrel")
Using pastry brush or your fingers, coat all parts with oil. Then rub on a spice mix, such as "Southwestern" or "barbecue." If you don't have a rub, mix the above ingredients thoroughly.

Put squirrel parts on baking sheet or cookie pan so they do not touch. Bake 30 min.

Then dab on barbecue sauce and bake 30 more min. If it seems to fall off the bones, it's done. If not, cook another half hour.

Serve with additional barbecue sauce for dipping.
