1 .lb russet potatoes
4 strips uncured applewood smoked bacon
salt and pepper to taste
olive oil, if needed
1 onion, chopped (optional)
2 tsp. apple cider vinegar
12 oz. ham, diced
1 package shaved Brussels sprouts
hot sauce and snipped chives for serving, if desired

Directions:

Quarter potatoes (I usually leave the skin on) and cook covered with cold water until tender. Dice.

Heat large sauté pan over medium heat and cook the bacon until golden brown. Remove bacon with slotted spoon or tongs and set aside.

Sauté potatoes in the bacon fat until lightly browned, seasoning with salt and pepper. You may need to add a little more olive oil if the pan gets too dry. While potatoes cook, dice bacon.

Add the onions (or you can substitute some onion powder if making for someone who doesn't like onions). Stir in the vinegar. Add ham, reserved diced bacon, and the shaved Brussels sprouts and cook until the sprouts are bright green and the ham is hot. Season with salt and pepper. Garnish with hot sauce and snipped chives, if desired.
