20 oz bittersweet baking chocolate
1 lb unsalted butter
½ C potato starch
½ tsp salt
1 tsp vanilla
⅔ C sugar
6 eggs

Directions:
Directions:
Preheat oven to 350º

Melt chocolate and butter in double boiler, stir until smooth. Stir in vanilla.

Beat eggs and sugar in large bowl until fluffy, add salt and potato starch

Temper egg mixture with warm chocolate then combine in bowl.

Pour into greased 9" round. bake 25-30 minutes. Center will still be soft. Do not over bake. Let cool completely in pan.

Remove from pan. serve with raspberries or top with ganache.
