Dad's Scalloped Oysters Recipe

1/4 lb butter
1/2 lb freshly made bread crumbs
1 cup freshly made cracker crumbs
1 pint shucked oysters, with their liquor
Salt
Dash of Tabasco
1 Tablespoon Cream

Directions:
Directions:
Preheat the oven to 425

Melt the butter in a skillet and toss in the bread and cracker crumbs, coating with the butter.

Spread half the crumbs over the bottom of a shallow baking dish.

Drain the oysters, reserving the liquor, and arrange in a single layer over the crumbs and sprinkle with salt.

Mix a healthy dash of Tabasco with the cream and 2 Tbsp liquor and dribble over oysters.

Cover with remaining crumbs and bake 25 minutes.

My Dad, Jerry Meyer, made this recipe every Thanksgiving. Can't remember a holiday without them. We loved them and couldn't wait. Watching him crush the crackers and put it together then digging into the hot dish when it was done. Good times.

Now, this is the recipe he used, but this is not the way I remember him making it. I remember him layering crackers and pats of butter with the oysters then butter and cream on top. That's how I make it, just like he did.

However you make it, it is delicious. I tried for years after he died to make it but would cry my way through it. Spent a Thanksgiving with Brenda and together we made it, and yes cried.

Dad was a good man and forever missed. But I will continue to make this and pass this down to my kids and grandkids.
