1 head cauliflower or frozen cauliflower
2 T butter
2 T flour
1 1/2 cup milk
1/2 tsp. salt
1/4 tsp. white pepper
1/2 cup green onions, chopped
1/4 cup breadcrumbs
1/2 cup grated cheese

Directions:
Directions:
Cook cauliflower in boiling, salted water for 20 minutes or steam in microwave. Drain. Break into flowerets and place in casserole dish. If using frozen cauliflower, you do not need to cook it.
Melt butter in saucepan, add flour and stir until blended. Gradually add milk, stirring until smooth and thick. Add salt, pepper, and onions. Blend well. Pour over cauliflower. Sprinkle with grated cheese and breadcrumbs. Bake 375º for 20 minutes or until cheese is melted and casserole is bubbly.
