Key Lime Yogurt Pie

1 Keebler graham cracker crust
1½ tsp. gelatin
½ cup key lime juice, fresh squeezed
1 cup non fat plain yogurt
½ cup sugar
1 tbsp. grated lime zest
key lime slices for garnish

Directions:

1. In a small bowl combine 2 tbsp. of the lime juice with the gelatin and stir.
2. Warm the remaining 6 tbsp. of lime juice for 30-45 seconds in the microwave
and quickly mix well to dissolve the gelatin.
3. In a large bowl with a hand mixer combine the cream cheese, yogurt, sugar and lime
zest. Mix well, then add the lime juice and mix well, until fully incorporated.
4. Pour into graham cracker crust. Chill pie thoroughly one hour before serving.
5. Garnish with key lime slices.
 

Low Fat Key Lime Pie

1 (3 oz.) pkg. sugar free lime gelatin
¼ cup boiling water
2 (6 oz.) containers lime flavor light yogurt
1 (8 oz.) container frozen low fat non-dairy
whipped topping, thawed
1 (9 inch) low fat graham cracker crust

1. Heat water in microwave until boiling. Whisk in gelatin until dissolved.
2. In a large bowl whisk together gelatin mixture and yogurt.
3. Fold in whipped topping with spatula and carefully spread in crust .
4. Refrigerate 4 hours or until set or overnight. Store in refrigerator.
 

Lime Bars

For crust:
¾ cup unsalted butter
1½ cups flour
⅓ cup confectioners' sugar
For filling:
3 eggs, room temperature
1¼ cups sugar
¼ cup flour
¼ cup lime juice, strained
1 tsp. lime zest
¼ tsp baking powder
⅛ tsp. salt

CRUST: 1. Preheat oven to 350º. Butter bottom and sides of an 8x8 inch baking dish.
Line with parchment paper.
2. Mix crust ingredients on low speed of electric mixer. Dough will form clumps.
3. Press dough into bottom and ½ inch up side of baking dish.
4. Bake 20-22 minutes until light golden. Remove from oven and place on rack to cool.
FILLING: 1. Beat eggs on medium speed until light and foamy.
2. Add remaining ingredients. Mix until well combined. Pour mixture over crust.
3. Bake 22-25 minutes until edges are lightly golden and center is set.
4. Cool in baking dish on rack. Chill 1 hour before serving. (Can make 2 days ahead.)
5. Remove from pan and cut into squares. Dust with confectioners' sugar if desired.

Lime desserts are a summertime classic. They're creamy and zesty and strike the right balance between sweet and tart. If you can't find key limes, use regular fresh lime juice.
