Ingredients:  
3 cups cooled mash potatoes (opt: make up from instant,
or 1.5 lbs raw, cooked & mashed with extra 2T each butter & milk/cream)
3 cups flour
1 tsp salt
1 Tbsp sugar
2 Tbsp shortening
2 Tbsp cream or milk

Directions:
Directions:
Combine ingredients well to make a soft dough.
Roll out 1 Tbsp at a time on a floured surface (pastry towel, etc)
Bake lightly on both sides on a medium hot griddle.
Cool on a dishtowel; keep separate until thoroughly cooled.

Serve with butter, cinnamon sugar, jam, peanut butter, cream cheese, cold cuts, cheese, etc.
