Make a roux with 1 T oil and 1 T flour
2 cups chicken broth
1 clove garlic
1 cup ground beef or pork sausage
1 medium onion, chopped
2 T fresh parsley or 1 T dried
4 cups cooked rice
salt and pepper to taste

Directions:
Directions:
Mix roux over low flame and cook until brown. Add broth, garlic, meat and cook 20 minutes. Add onions and parsley, simmer 10 minutes. Mix with cooked rice and seasonings. Simmer about 10 minutes.
