Ingredients:
Ingredients:
1 large skillet of cornbread (recipe in this book)
chicken broth
chopped celery including leaves
chopped onion
3 eggs
poultry seasoning
Thyme (Optional)
Seasoned Bread Crumbs (Optional)

Directions:
Directions:
Crumble cornbread and pour in celery and onion. Season with poultry seasoning. I also add thyme. If you desire more of a mix, add in a few cups of seasoned bread crumbs or just leave it as cornbread only.

Mix 3 eggs with 2 cups of chicken broth and then pour over stuffing mix. Mix gently. Slowly add more chicken broth until bread is thoroughly moist but not soaking. You can stuff this into a turkey or chicken, or just bake it in a pan. For a more moist stuffing, cover with tinfoil for first 25 minutes, then uncover.

Personal Notes:
This recipe has no measurements because that's how it was taught to me. My friend Sally Saulsbery originally taught me how to make stuffing. Later I started making it with home made cornbread.
