1 box duncan hines white cake mix (any other white or yellow or even strawberry cake mix can be used but this one is real light)

Mock whipped cream frosting:

1/4 cup flour
1cupmilk
1/2 cup shortening
1/2 cup butter (not margarine)
1 cup sugar
1 tsp vanilla or strawberry flavoring

1 lb strawberries

Bake cake as directed. I use the duncan hines white because it's a real light cake. Any white, yellow or even strawberry cake mix is ok.
You can bake in 2 8 or 9 inch layers or 9 x 13 inch oblong pan.

For frosting

Slice strawberries and place in a bowl with paper towels so they aren't so wet.

Whisk together the flour and milk in a saucepan. Place over medium-high heat and cook, stirring constantly, until the mixture is thick like pudding. Remove from heat and set aside to cool completely.

Combine the butter and shortening in a mixing bowl. If you have a whisk attachment use it but do not attempt to make this frosting if you don't have an electric mixer (stand mixer works best). Beat on medium high speed for 4 minutes until it is light and fluffy. Add the sugar and bet for an additional 4 minutes. Add the cooled milk mixture, scraping sides as needed.

To assemble cake: Spread a thin layer of frosting on cake. If making layer cake put a layer of strawberries, then more frosting to cover. Top with second layer and repeat. Layer more strawberries on top..

You can also chop strawberries, add to frosting, then frost cake and top with more strawberries.

I had strawberry cake from Ambrosia bakery and was determined to make a similar version. Did a lot of experimenting and this was the end product. Have gotten rave reviews land lots of requests even when strawberries are not in season.
