1 c sugar
2 ½ tsp salt
2 eggs, beaten
2 qt water
1 T oil
16 oz box Acini de Pepe (sometimes called soup macs; found in pasta section of the store)
3 (11 oz) cans mandarin oranges, drained
2 (20 oz) cans pineapple chunks, drained (set juice aside)
1 (20 oz) can crushed pineapple, drained (set juice aside)
2 cartons (one 4 ½ ox and one 9 oz) Cool Whip
1 c miniature marshmallows
1 c flaked coconut (optional)
1 T flour
1 ¾ c pineapple juice
1 T lemon juice

Directions:
Combine sugar, flour & ½ tsp salt. Gradually stir in pineapple juice and eggs. Cook until thickened. Add lemon juice. Cool to room temperature. Bring water to boil and cook soup macs. Drain and cool. Combine first ingredients with macs. Mix lightly and refrigerate.

Next day, add remaining ingredients and refrigerate in airtight container until thoroughly chilled. Refrigerate leftovers.
