Ingredients: 20 Hydrox Cookies, crushed No substitions. Oreos don't work. 3 Tbs Butter, melted
1 envelope Knox Gelatin 1/4 c warm water 1 c milk 1 c sugar 3 eggs, separated ¼ tsp salt 1 c heavy whipping cream 1 tsp vanilla

Directions:Combine cookie crumbs and butter, saving a few for garnishing the top of the dessert. Line a 12 x 8 dish with crumbs and press in firmly.
Soften the gelatin in water and set aside. Make the custard in a heavy saucepan combining the egg yolks, milk and sugar. After 5 minutes of cooking, add salt. Cook just to a boil, stirring constantly. Add gelatin to hot mixture, stirring well and set aside to cool.
Beat egg white just til stiff, not dry. (Google it) Whip the cream and gently fold into the egg whites. Add vanilla. Combine with the cooled custard gently. Pour into cookie-lined dish. Top with reserved crumbs and refrigerate 24 hours. |

Notes: So I went to undergraduate school at Emporia State University from around 1975 to 1978 and continued straight through to earn a Master's degree, Vocational Education, and K-12 post-graduate teaching certification. I picked Emporia basically because my boyfriend was going there. Not proud but it was iffy that I decided to go to college at all. I had a horrible high school experience which was embroiled in racial unrest. Reverse discrimination is a real thing and I resented the teachers who hid in their classrooms because they were afraid. I left after my junior year and went to KCK Community college biding time until I was old enough (18) to apply to Breech Academy, the training school for TWA Stewardesses. The Community College turned my view of education completely around. For the first time, I was challenged and fascinated by my classes. I earned 30 credits after my 2 semesters there. I had met my boyfriend the summer before who I later married after we both finished our Master's degrees in education. I bounced around in various majors starting in Political Science and ending in Home Economics. I needed a dress for a pageant, had no sewing machine so I enrolled in a clothing class. Great dress, new major. It was a good semester. In hindsight, it was a brilliant major. We were required to take classes in Interior Design, Clothing Design and pattern making, Nutrition and Foods (cooking). Many, many life skills I learned from that major. The end of the year High Tea was the annual occasion for the very secret recipe, Hydrox Cookie Dessert, given only to the 3 honor students each year along with a copy of the Joy of Cooking. If I am found murdered in the kitchen, look for Home Ec majors from Emporia since I have now published the recipe for this divine dessert. Google it...it's nowhere to be found.
