8 oz elbow or other tubular pasta
½ T olive oil
3 T unsalted butter
1/6 c all purpose flour
1 ½ c whole milk
½ c heavy whipping cream
2 C sharp cheddar, shredded
1 c Gruyere cheese shredded
Salt and pepper to taste
¾ c panko crumbs
2 T butter, melted
¼ c Parmesan cheese, shredded
⅛ c smoked or not smoked paprika

Preheat oven to 350º. Lightly grease 3-4 qt baking dish. Combine shredded cheeses.
Cook pasta 1minute shy of al dente. Remove from heat, drain, place in a large bowl.
Drizzle pasta with olive oil, stir to coat pasta, set aside to cool. Melt butter in a large pan. Whisk in flour over medium heat. Continue whisking for one minute until bubbly and golden. Gradually whisk in milk and heavy cream until smooth. Continue whisking until bubbles form on the surface, whisk in salt and pepper. Continue cooking and whisking 2 more minutes. Add 1 cup shredded cheese, whisk until smooth. Add another cup of shredded cheese, whisk until smooth, creamy and thick. Stir in the pasta until fully coated with cheese sauce. Pour ½ the Mac and cheese in the baking dish. Top with 1 c shredded cheese and then the other ½ pasta mix in a small bowl, combine panko,Parmesan,melted butter and paprika. Sprinkle over the top, bake 30 minutes until bubbly and golden brown.

This mac and cheese is worth the preparation! This recipe is for half of the original recipe. You can scale it up or down for a bigger crowd.
