2 Tbsp yeast
2 cups dark rye flour
2½-3 c. bread flour
1 Tbsp caraway seeds
2 tsp fennel or anise seeds
1 tsp salt
2 tsp grated orange peel
8 oz grated sharp cheddar or other firm cheese
1½ cups warm water
½ cup molasses
1 egg (opt)

Directions:
Directions:
Mix dry ingredients together, setting aside about 1 cup of bread flour to add as needed.
Stir in cheese. In large bowl combine water & molasses & gradually add flour mixture.
Cover & let rest about 15 minutes. Knead until smooth, adding enough flour to prevent sticking. Grease bowl & dough. Cover & let rise about 2 hours.
Punch down and shape into a large round loaf or 2 medium loaves. Let rise another hour.
Bake at 350º for about 45 minutes.
