½ cup boiling water
½ teaspoon baking soda
1¼ cup sugar
2 cups rolled oats
2 cups flour
2 cups bran flakes
1 teaspoon baking powder
1 teaspoon salt
1¼ cups butter or shortening
Directions:
Directions:
1. Preheat oven to 450º.
2. Line cookie sheets with parchment paper.
3. Add baking soda to boiling water and let stand until cool.
4. In a large bowl mix together sugar, oats, flour, bran flakes, baking powder, and salt.
5. Cut in shortening (or butter) with pastry blender or fingers.
6. Add soda dissolved in water to mixture and blend.
7. Refrigerate batter 10 minutes.
8. Roll out on floured surface to ¼-inch thickness. Cut in squares or circles with cutter and place ½ -inch apart on greased cookie sheet.
9. Bake at 450º, for 8-10 minutes, until golden brown.

For many years Brendon ate very few sweet treats. When offered desserts, he always declined, usually responding, "I'm sweet enough". Birthday celebrations for Brendon presented a challenge, to create something that would appeal to him, and he would enjoy trying.
After he began cancer treatments, his tastes changed; ice cream and these Oat Cakes, with a fresh cup of coffee, became his go to snacks! Brendon enjoyed dozens of these on our many trips to Halifax.
Of all the "Cape Breton Oat Cake" recipes, this one is my favourite!
